Seu Pizza Illuminati – Trastevere. Style: innovative Roman pizza

Pizzeria Seu is a very famous place in Rome, often mentioned among the best for its innovative pizza and high-quality ingredients. Pier Daniele Seu and his wife and partner Valeria Zuppardo have developed over the years a contemporary idea of pizza, always focusing on the use of top-quality ingredients. Both Seu Pizza Illuminati and Tac – Thin and Crunchy offer products that, starting from tradition and classic flavors, are the result of a creative mindset and innovative process. Thinking outside the box: this is the main characteristic that makes Pier Daniele Seu and the identity of his pizzas so recognizable.

Piccolo Buco – Trevi Fountain. Style: Km0 Roman pizza

Piccolo Buco is a very small pizzeria with a strong focus on quality. For the selection of raw materials, Piccolo Buco exclusively chooses fresh and seasonal products, with particular attention to Slow Food presidia and regional excellences. This care makes their pizza unique, thanks to a dough that is both soft and crispy, combined with high-quality ingredients that blend tradition, creativity, and experimentation. Luca Issa, born and raised in Rome, is a young restaurateur with long experience in Roman gastronomy. After working in his father’s business, he took over the century-old oven in Via del Lavatore in 2015, quickly transforming it into a gourmet pizzeria with Roman cuisine.

Trieste Pizza – Monti District. Style: pan pizza/Abruzzese

Here they make signature mini pizzas! The idea was born in Pescara, from a family of pizza makers, in the fifties. The enterprising Gabriele Ciferni, at the historic “Trieste” bathing establishment, began feeding the bathers with his round mini pizzas. Over the decades, it has established itself as a benchmark product in the quality fast food sector. It is an artisanal pizza cooked in an iron pan inside an electric oven at 380 degrees. It presents itself as a fragrant mini pizza with over thirty toppings available. The place is small, but if you can’t find a seat, no problem, the mini pizza can be enjoyed open or folded, sitting or while strolling. The surprising and tasty combinations of ingredients are all recognizable in their identity.

180 gr pizza romana – Tor Pignattara. Style: innovative Roman pizza

Outside the tourist circuits, in the heart of the Tor Pignattara district, the young Jacopo Mercuro prepares excellent pizza. We can count him among the protagonists of a certain _revolution in the world of Roman pizza. In recent years, indeed, the world of pizza has undergone continuous change. If Roman pizza has managed to step out of its comfort zone, some credit also goes to them. Inspired by the famous 1985 film Back to the Future, the BACK TO THE PIZZA project was born. This project represents the intuition to bring the ancient tradition of Roman pizza into the future. The recipe includes indirect dough with long fermentation times and manual stretching. A mix of passion and stimuli to improve and surprise, always maintaining high quality. The pizza amazes with its lightness.

La gatta mangiona – Monteverde Nuovo. Style: Roman pizza

If there’s a neighborhood pizzeria capable of making Romans move from one district to another, it’s this one. In 1973, Cecilia Capitani, Giancarlo Casa, and Sergio Natali met at the First Scientific High School. Fifteen years later, Cecilia and Giancarlo got married. Twenty-six years later, they decided to embark on a new adventure together: opening a pizzeria. La gatta mangiona, from the beginning, wanted to renew the traditional concept of a pizzeria. Overcoming the cliché that only low-cost ingredients should be used in a pizzeria. A historic pizzeria that still manages to make a name for itself. The supplì are also excellent.

72 ore – Tuscolana. Style: gourmet Roman pizza

The pizzeria tries to combine tradition and innovation. The goal is to remain culturally linked to the past with an eye on the evolution of taste. The 72 Ore project was born professionally, from a business idea, but the result is decidedly satisfying. Capable of satisfying everyone’s taste: from the most refined palates to the various needs of the market and clientele.

Dar Poeta – Trastevere. Style: neither Neapolitan nor Roman

Always one of the favorite pizzerias of Romans located in the historic alleys of the district. The pizzeria is indeed in one of the most photographed and characteristic alleys of Trastevere. The building dates back to the 1600s and before hosting the pizzeria, it was used as a stable and storage. Three hundred years later, the first oven was built, which, believe it or not, is still the same one in which the pizza of Dar Poeta is baked. For many years it was a tavern and, in the 1940s, a bakery, becoming a reference point in the neighborhood, especially during the war. During that period, women left alone to manage home and children while their husbands were at the front, joined forces to run the oven. This became a symbol of solidarity to avoid falling into loneliness or sadness. Beyond the romantic history, the pizza at Dar Poeta is decidedly tasty: neither Roman nor Neapolitan.

Tonda – Nomentano District. Style: gourmet Roman pizza

Pizzeria Tonda is one of the most appreciated works of the famous Roman pizzaiolo Stefano Callegari, known not only for this place but also for other iconic signs like Sforno, 00100/Trapizzino, and Sbanco. Located in the Montesacro/Nomentano district of Rome, Tonda is a place with an informal and convivial atmosphere.  Tonda’s philosophy is to combine tradition and creativity. Thus, the round Roman pizza is reinterpreted with high-quality dough, light but flavorful. Characterized by a crispy crust and a soft center, resulting from careful leavening and selected ingredients. Iconic specialties like the Cacio e Pepe — one of Callegari’s signature pizzas — and the Greenwich with Blue Stilton and Port reduction. Ideal for those seeking bold and original tastes.

Our pizza tour will reveal everything behind this amazing food, do not miss it

Gourmetaly food experience: since 2013 ambassadors of Roman pizza worldwide

When we launched our first Food Tour of Rome, starting from Campo de’ Fiori and winding through the Jewish Ghetto and Trastevere, our fellow citizens considered us crazy. It seemed unthinkable, they said, that tourists could be guided to discover bakeries and pizzerias. For every Roman, having a trusted bakery or pizzeria is completely natural. However, time has shown that understanding a foreign food & wine culture is not so simple. Moreover, a guided tasting by an expert can truly open one’s mind and broaden one’s horizons. History, tradition, and the choice of ingredients are all fundamental elements of that gastronomic culture we wish and must preserve. It is a true mission for us. To this wonderful intangible heritage of Humanity, pizza, we have dedicated an entire tour.
