Mescolate gli ingredienti e lasciandoli riposare per un&#8217;ora. In una piccola ciotola mescolate la ricotta di pecora, estremamente fresca con 2 uova intere. Si aggiunge poi lo zucchero di canna e un pizzico di cannella. Aggiungere, a piacere, l&#8217; uva passa o frutta candita o gocce di cioccolato o marmellata di visciole. Ungete una teglia con del burro (o usare della carta da forno) e stendete met\u00e0 dell&#8217;impasto. Versate il mix di ricotta. Con la restante met\u00e0\u00a0 di impasto fare lunghe strisce per decorare la crostata con un motivo incrociato. Cuocere in Forno caldo\u00a0 180C\u00b0 per mezz&#8217;ora circa.
