Scopriamo l\u2019origine dei Mostaccioli e la ricetta di questi dolcetti speziati.<\/h3>\n<h4>Da Roma all\u2019Italia: le origini antiche dei mostaccioli<\/h4>\n<p>I Mostaccioli derivano dai <em>mustaceus<\/em>, dolcetti preparati gi\u00e0 nell\u2019<a href=\"https:\/\/gourmetaly.com\/it\/via-appia-antica-patrimonio-unesco-dove-mangiare\/\">antica<\/a> Roma. Vengono citati per la prima volta nel <strong>De Agricoltura di Catone<\/strong>, intorno al II secolo a.C. Infatti, gli antichi romani erano soliti preparare queste piccole focacce <a href=\"https:\/\/gourmetaly.com\/it\/14-febbraio-il-giorno-degli-innamorati-i-dolci-per-festeggiare-un-giorno-speciale\/\">dolci<\/a>, fatte con farina, <strong>mosto<\/strong> e anice che poi venivano avvolte nelle <strong>foglie di alloro<\/strong> e poi cotte. Solitamente questi dolcetti rappresentavano dei tipici doni di nozze. La loro amicizia \u00e8 legata alla <a href=\"https:\/\/gourmetaly.com\/it\/le-ricette-della-tradizione-da-mangiare-in-giorni-speciali-a-roma\/\">tradizione<\/a> dei mostaccioli romani perch\u00e9 nel 1210, Jacopa de\u2019 Settesoli ebbe la possibilit\u00e0 di conoscere Francesco d\u2019Assisi e fu lei ad aiutarlo a trovare alloggio e a inventare la ricetta dei mostaccioli che tanto piacquero al santo. Sono tipici del periodo della vendemmia. Per quanto riguarda gli ingredienti, un tempo venivano preparati con la pasta del <a href=\"https:\/\/gourmetaly.com\/it\/piatti-della-tradizione-romana-il-pane\/\">pane<\/a> mescolata al miele, le mandorle e il <strong>mosto d\u2019uva<\/strong>. Aggiungere successivamente gli albumi, le noci tritate, un cucchiaino di cannella e un pizzico di <a href=\"https:\/\/gourmetaly.com\/it\/piatti-della-tradizione-romana-tonnarelli-cacio-e-pepe\/\">pepe<\/a>. Mescolare con attenzione fino a ottenere un composto omogeneo. Spolverare un piano di lavoro con della farina. Versare il composto preparato e stenderlo fino a renderlo uniforme. Tagliare l\u2019impasto a rombi di circa 10-12 cm. Poi prendere una teglia, foderarla con carta forno e disporre i mostaccioli appena tagliati.
