Si trattava di quei contadini che lavoravano le vigne e gli orti fuori Roma, in zone come i <a href=\"https:\/\/gourmetaly.com\/it\/visite-in-cantina-casale-marchese-frascati-team-building\/\">Castelli<\/a> Romani o l\u2019<a href=\"https:\/\/gourmetaly.com\/it\/visita-in-cantina-team-building-marco-carpineti\/\">Agro Pontino<\/a>, note per i loro estesi vigneti. In primavera, durante la potatura delle vigne, i contadini raccoglievano anche quello che l\u2019orto offriva loro. Infatti, la <strong><em>vignarola<\/em> \u00e8 un piatto che insegna a cucinare con quel che offre la terra<\/strong>, a <strong>rispettare i tempi della natura<\/strong> e a <strong>valorizzare la semplicit\u00e0<\/strong>. Una sinfonia verde, leggera ma molto saporita. Si prepara con un mix di verdure primaverili al massimo della loro freschezza: <strong>fave, piselli, carciofi, lattuga romana, cipollotti freschi e mentuccia.<\/strong> Una specie di stufato di verdure appena colte. Si dice che i contadini romani lo preparavano con quello che avevano a disposizione, spesso usando le verdure che crescevano nei vigneti o nei campi vicini. Niente si sprecava, tutto si valorizzava. Le verdure vengono cotte lentamente in <a href=\"https:\/\/gourmetaly.com\/it\/olio-extra-vergine-di-oliva-il-gusto-del-mediterraneo\/\">olio d\u2019oliva<\/a>, e volendo una sfumata di vino <a href=\"https:\/\/gourmetaly.com\/it\/vino-moscato\/\">bianco,<\/a> creando un condimento che esalta i sapori genuini di ogni ingrediente.<\/p>\n<h3 class=\"cvGsUA direction-ltr align-justify para-style-body\"><span class=\"OYPEnA font-feature-liga-off font-feature-clig-off font-feature-calt-off text-decoration-none text-strikethrough-none\">Il profumo della <em>vignarola<\/em><\/span><\/h3>\n<p class=\"cvGsUA direction-ltr align-justify para-style-body\"><span class=\"OYPEnA font-feature-liga-off font-feature-clig-off font-feature-calt-off text-decoration-none text-strikethrough-none\">Da pasto contadino la <em>vignarola<\/em> \u00e8 diventata una pietanza simbolo della <a href=\"https:\/\/gourmetaly.com\/it\/gnocchi-alla-romana-la-ricetta-originale\/\">cucina romana<\/a> primaverile. C\u2019\u00e8 chi dice che fosse il piatto della domenica nei borghi fuori Roma. I bambini aiutavano a sbucciare le fave, le nonne tagliavano i carciofi con la maestria di un chirurgo e il profumo invadeva tutta la casa. A differenza di oggi, il pasto della domenica era fondamentale per la convivialit\u00e0. E la <em>vignarola<\/em> rappresentava proprio uno di quei momenti. Basta un cucchiaio ed \u00e8 fatta! Nonostante la grande quantit\u00e0 di verdure, non si tratta di una ricetta <em>veggie.<\/em> In quella tradizionale, infatti, il guanciale \u00e8 d\u2019obbligo. Tuttavia, alcuni chef romani l\u2019hanno reinventata come farcitura per torte salate o crostini gourmet. Qualcuno ci mette la pancetta, altri la vogliono vegetariana e leggera. C\u2019\u00e8 chi aggiunge un po\u2019 di mentuccia romana, chi sfuma col vino bianco, chi la serve tiepida sopra una<a href=\"https:\/\/gourmetaly.com\/it\/piatti-della-tradizione-romana-la-bruschetta\/\"> bruschetta.<\/a> Ma la base resta sempre quella: verdure di stagione, olio buono, e una cottura lenta che fa uscire tutto il sapore. Per noi il guanciale e una spolverata di pecorino romano sono un must.<\/span><\/p>\n<p class=\"cvGsUA direction-ltr align-justify para-style-body\"><em><span class=\"OYPEnA font-feature-liga-off font-feature-clig-off font-feature-calt-off text-decoration-none text-strikethrough-none\">(per 4 persone)<\/span><\/em><\/p>\n<p class=\"cvGsUA direction-ltr align-justify para-style-body\"><em><span class=\"OYPEnA font-feature-liga-off font-feature-clig-off font-feature-calt-off text-decoration-none text-strikethrough-none\">2 carciofi romaneschi<\/span><\/em><\/p>\n<p class=\"cvGsUA direction-ltr align-justify para-style-body\"><em><span class=\"OYPEnA font-feature-liga-off font-feature-clig-off font-feature-calt-off text-decoration-none text-strikethrough-none\">500 g di piselli<\/span><\/em><\/p>\n<p class=\"cvGsUA direction-ltr align-justify para-style-body\"><em><span class=\"OYPEnA font-feature-liga-off font-feature-clig-off font-feature-calt-off text-decoration-none text-strikethrough-none\">500 g di fave fresche<\/span><\/em><\/p>\n<p class=\"cvGsUA direction-ltr align-justify para-style-body\"><em><span class=\"OYPEnA font-feature-liga-off font-feature-clig-off font-feature-calt-off text-decoration-none text-strikethrough-none\">1 cespo di lattuga romana (non troppo grande)<\/span><\/em><\/p>\n<p class=\"cvGsUA direction-ltr align-justify para-style-body\"><em><span class=\"OYPEnA font-feature-liga-off font-feature-clig-off font-feature-calt-off text-decoration-none text-strikethrough-none\">1 limone<\/span><\/em><\/p>\n<p class=\"cvGsUA direction-ltr align-justify para-style-body\"><em><span class=\"OYPEnA font-feature-liga-off font-feature-clig-off font-feature-calt-off text-decoration-none text-strikethrough-none\">2 cipollotti freschi<\/span><\/em><\/p>\n<p class=\"cvGsUA direction-ltr align-justify para-style-body\"><em><span class=\"OYPEnA font-feature-liga-off font-feature-clig-off font-feature-calt-off text-decoration-none text-strikethrough-none\">Olio extravergine d&#8217;oliva<\/span><\/em><\/p>\n<p class=\"cvGsUA direction-ltr align-justify para-style-body\"><em><span class=\"OYPEnA font-feature-liga-off font-feature-clig-off font-feature-calt-off text-decoration-none text-strikethrough-none\">40 g di guanciale<\/span><\/em><\/p>\n<p class=\"cvGsUA direction-ltr align-justify para-style-body\"><em><span class=\"OYPEnA font-feature-liga-off font-feature-clig-off font-feature-calt-off text-decoration-none text-strikethrough-none\">sale e pepe q.b.<\/span><\/em><\/p>\n<p class=\"cvGsUA direction-ltr align-justify para-style-body\"><span class=\"OYPEnA font-feature-liga-off font-feature-clig-off font-feature-calt-off text-decoration-none text-strikethrough-none\">Mondare i carciofi per bene, dividerli in due e poi a spicchi. Lasciarli in acqua e succo di limone per non farli annerire. Sgranare i piselli e le fave. Lavare e tagliare la lattuga a strisce non troppo piccole. Scaldare l\u2019olio in una padella e lasciare appassire i cipollotti affettati sottili insieme al guanciale a dadini. Quando il tutto \u00e8 leggermente dorato aggiungere i carciofi, i piselli e le fave poi il<\/span> <span class=\"OYPEnA font-feature-liga-off font-feature-clig-off font-feature-calt-off text-decoration-none text-strikethrough-none\">sale e il pepe. Lasciare cuocere a fuoco basso per circa dieci minuti. In ultimo aggiungere la lattuga e proseguire la cottura, sempre a fuoco lento per un altro quarto d\u2019ora. Un segreto \u00e8 quello di non aggiungere l\u2019acqua. Una volta impiattata, aggiungere un filo d\u2019olio a crudo e una spolverata di <a href=\"https:\/\/gourmetaly.com\/it\/come-abbinare-vino-e-formaggio\/\">pecorino<\/a> romano.
